I love start a day with a great breakfast, add rosewater to make it a bit more special!
Hey guys, time is ticking. Have you got your Valentine’s day plan sorted? As I mentioned before, Andrew is not interested in flowers, candlelights sort of stuffs. BUT! He does like taking the opportunity to check out some restaurants! You might think they mark up the price for this day, you might be surprised how many good deals out there!
Or, you can do something yourself like this super easy yet tasty breakfast parfaits. All I did was layer fruits, granola, rhubarb compote and yoghurt into whisky glasses. You don;t have to make compote and granola by yourself but’s it’s easiest way to add personal touch this way. You can use stemless wineglasses, add some jello or edible flowers to make it fancier.
Below I used the rhubarb compote recipe from Taste.com and granola from BBC Good Food. However, I will give you my dummy version, because I have a Must-make-some-mess disorder. And I am serious. I didn’t use Cinnamon and such, my aim is to add rosewater to give it a little romantic vibe, hah! Here we go…
1 Punnet of Strawberries.
1 bundle of Rhubarb
1/2 Cup Caster Sugar
125ml Water
1 Tablespoon of Rosewater
1. Stir the sugar into low heated saucepan till it dissolved.
2. Halve the strawberries, chop the rhubarb into 3-5 cm little chunks. Then mix strawberries and rhubarbs all into the saucepan.
3. Cook it till all the ingredients soften. Stir occasionally in case of burning the bottom part.
4. Set aside to cool then add rosewater in and give it a little stir.
Note: Do not add rosewater while cooking, the beautiful scent vaporised due to the heat.
Note 2 : I tasted while it’s still hot, so I added a bit more sugar. It turned out way sweeter than it’s hot when it’s chilled.
300ml Roller Oats
1 bag of nibble mix (Yes, I am lazy. Get the one with seeds and dried fruits)
2 Tablespoon of oil
150ml Maple Syrup
Some Goji berries
(Optional) Cinnamon Ground Powder
1. Mix oil and Maple syrup then add oats till oats well covered.
2. Add mixed nuts (without dried fruits) into bowl and mix them well. Layer them onto 2 flat trays with baking paper.
3. Put them into the oven with 150C/fan 130C/gas and bake for 10 minutes.
3. Take them out and sprinkle dried fruits all over the baked oats. Put them back into the oven for another 10-15 minutes. I used a lot because I love berries.
4. Remove and scrape onto a flat tray to cool.
Note: Pay attention for the first 5 minutes, if you sniff burnt smell then turn down the temperature immediately.
Note 2 : It’s normal it might not be super crunchy while it’s still hot because of the maple syrup. Don’t leave it in the oven too long otherwise it will end up very hard to break up with baking paper.
know it’s a very simple dish if you choose to use shop bought ingredients to make it. But when you make it with your heart, I think it’s always tastier, don’t you think? As you can see, I am definitely a sweet tooth and I love fresh homemade food just as much as I love tasting in restaurants!
