How’s your week so far? Isn’t it great that it’s finally Friday and long weekend makes it even more awesome! And of course, Anzac day you definitely can’t miss out Anzac biscuits!! I decided to make these Anzac buscuits last night because I love love Anzac buscuits and thought why not use muesli at home to make some myself!?
It’s totally spontaneous so I didn’t have much time to experiment my dough much but it turned out alright! Due to not much time to prep, I used the recipe that I found by Taste.com (again!). It’s amazing how many recipes they have got and this recipe is good for first timer as well;-)
So what’s Anzac biscuits? Anzac biscuit is a traditional, eggless sweet biscuit. Ingredients normally include rolled oats, sugar, plain flour, coconut, butter, golden syrup or treacle, bi-carbonate of soda and boiling water.Of course, I substituted fairly bit, but spirit is the same. 2 tablespoons boiling water
1 teaspoon bicarbonate of soda
100g butter, melted, cooled
2 tablespoons maple syrup
2 cups natural muesli (note: natural ones!)
½ cup brown sugar
1 cup Whole meal flour
10 figs diced to small pieces (I used Angas Park here, I just love figs in these kind of biscuits….)
100g desiccated coconut
1. Stir the sugar into low heated saucepan till it dissolved.
2. Combine the water and bicarbonate of soda in a bowl. Add the melted butter and maple syrup then stir to combine.
3. Place muesli, brown sugar, coconut and flour in a large mixing bowl. Pour in butter mixture and use a wooden spoon to mix until well combined.
4. Place spoonful of the mixture onto the lined trays about 3-5cm apart. I used one hand to press down my mixture firmer due to my muesli content is quite high.
5. Bake in preheated oven for 10-12 minutes or until golden. Stand on baking trays for 5 minutes before transferring to a wire rack to cool.

If the dough is a bit too dry, you can add more liquid in and make them sticked firmer. You can use milk, melted butter and maple syrup or put them to freezer for 20 minutes before baking them. I made about 25 of those.

I love the crunchiness from coconut and fig seeds. Whole meal flour made them more nutritious!
